I'd probably advise against picking both long blade and short blade. They will level faster if they're in Major/Minor though. So even if you don't choose any stealth skills in Major/Minor you can get good at them later. So you can start with whatever skills you want, train those up, get a bit of money and then buy training in the rest that you think would be useful.
The thing is with Morrowind there is no cap on the amount of times you can train per level.
